Late November in Key West is an angler’s paradise, and aboard the charter boat WildBill, every trip promises adventure. With Captain Art Duplessis at the helm and Jerry as the mate, we headed out with high hopes of catching Mackerel and Tuna. But fishing is always full of surprises, and instead, we landed four Dolphin (Mahi-Mahi), making it a day to remember.
The morning began with clear skies and a light breeze as Capt. Art navigated the WildBill to his trusted fishing grounds. The excitement built as Jerry prepped the lines and gave us pointers to maximize our chances. Before long, the rods bent, and the action was on.
Each Dolphin put up an exhilarating fight, their brilliant colors flashing as they darted beneath the surface. Capt. Art’s expertise and Jerry’s quick work ensured we didn’t lose a single fish. By the time we boated our fourth Dolphin, the adrenaline was still pumping, and the satisfaction was unbeatable.
Back at the dock, Jerry filleted our fresh catch with the precision of a pro. His skills made quick work of the Mahi-Mahi, turning them into perfect fillets ready for the table. We took our catch straight to Dante’s, a Key West favorite for its cook-your-catch service.
The chefs at Dantes worked their magic, preparing the Dolphin grilled, blackened, and fried. Every bite was a reminder of the incredible day we’d just experienced.
